Jeff, I'm no expert by any means, but as Spidr said, you should allow yourself a buffer, this comparison that I dug up when searching for the CFM of my carb (HSR42) shows that pretty well.

Don't know about anyone else, but I'd be quite interested in more detail on the twin carb manifold you made up, looks like it would function quite well. ( I have an XV1000 and the intakes are the same between the XV and XVS ).

I was hunting for an XT500 for my project, but they're regarded as "classic" bikes over here nowadays and the money for basket cases was crazy, so I went with an XT600 instead.

I'm sure someone more qualified will respond, but I doubt a long front end would make a bike MORE susceptible to lifting, though as you've said they extra weight/leverage out front could make it easier to control.
